What’s the Best Way to Juice Lemons?
- Electric citrus juicer: while I’m not generally a fan of single use kitchen gadgets, I reserve a special place in my heart (and storage closet) for this citrus juicer, especially in the summer. If you make homemade lemonade on the regular, it’s a worthy investment.
- Citrus reamer: a handy tool for most kitchens, from making fresh lemonade to squeezing citrus for cocktails. Get one with a base for collecting the juice, bonus points if it has measurements built in. Simply cut your fruit in half and twist around the ridged edges to extract your juice.
- Citrus squeezer: juice over a large (4 cup) wide-mouthed pyrex measuring cup for less spillage and easy measuring and pouring.
- A fork: yes, really! Lacking none of the above, twisting the tines of a fork into a halved lemon will do a decent job of juicing.
Whether you go electric or manual, roll the lemons back and forth on the counter a few times to loosen the membranes to make juicing just a bit easier.
And remember – you’re going to get some seeds and pulp when you manually juice. I recommend straining regardless of which side of the pulp debate you fall on so you can extract any seeds. Add pulp back into the juice according to taste.
How Many Lemons Yield One Cup of Juice?
The average lemon yields roughly 2 tablespoons of lemon juice, so you’ll need 6-8 lemons to get enough juice for this recipe. Some lemons are juicer, and some methods (like an electric juicer) yield more juice.
How to Make Simple Syrup
Many homemade lemonade recipes call for simple syrup. Luckily it’s really simple to make!
Combine two parts sugar to one part water in a small saucepan. Whisk over medium high heat until the sugar dissolves, then set aside to cool. It keeps in the fridge for a few months. It’s handy to have around for lemonade, cocktails, and sweetened mocktails.
Trying to cut sugar? Use honey instead! For most lemonade recipes, you can substitute honey for sugar. Use ⅔ c honey for every 1 c sugar.
