1 tbsp olive oil 1.5 lb boneless skinless chicken ½ tsp kosher salt ½ tsp ground pepper 2 large carrots, sliced 2 scallions, thinly sliced 1 tbsp sesame seeds STIR FRY SAUCE 6 tbsp coconut aminos, soy sauce, or tamari ¼ c honey 3 cloves garlic, chopped 2 tbsp rice wine vinegar 2 tsp sesame oil 1 tbsp cornstarch, or arrowroot powder

Dump all sauce ingredients into a blender or food processor and blend on high until the garlic is completely pulverized and the sauce is smooth.
Dice the chicken, then saute in oil until no longer pink. Season it with a bit of salt and pepper while it cooks.
Add the sliced carrots to the pan, then pour in the honey garlic sauce. Give everything a good toss, then simmer.
Continue to simmer for 5-7 minutes, until the sauce is thick and golden brown and the chicken is cooked through. Stir in the green onions at the end.
Stir until the onions wilt slightly (about a minute), then garnish with sesame seeds.
Serve over rice or cauliflower rice, or divide into meal prep portions and keep up to 4 days in the fridge.
