4 tbsp butter 2 tbsp olive oil 1 tsp garlic powder 1 c panko breadcrumbs ⅔ c grated parmesan cheese 2 tsp italian seasoning 1 tsp kosher salt ½ tsp ground pepper 1 lb boneless skinless chicken breasts, sliced into cutlets chopped fresh parsley or basil, to taste, optional
Whisk breadcrumbs, parmesan cheese, italian seasoning, salt, and pepper in a low bowl. Combine butter, olive oil, and garlic powder in a second bowl; cook 30 seconds, or until butter melts. Whisk until smooth.
Divide chicken breasts into cutlets (slice through the center horizontally to create two thinner breast pieces).
Dredge chicken through the butter mixture, lightly coating both sides.
Place into the breadcrumbs mixture and press to adhere; flip and press the coating onto the other side.
Bread all chicken pieces, then transfer to a parchment lined baking sheet.
Bake for 20 minutes in a 425°F oven; flip once halfway through. Garnish with fresh herbs just before serving.
