½ c olive oil 1 egg 1 c molasses, mild, not blackstrap ½ c dark brown sugar 1.5 tsp baking soda 1 tsp cinnamon 2 tsp ginger ½ tsp cloves ½ tsp salt 2.5 c all purpose flour 1 c hot water, just barely boiled Whipped cream, for serving Powdered sugar, for serving
In a large bowl, whisk the egg and olive oil until smooth. Add the molasses and brown sugar and whisk once again until very smooth, with no lumps.
Add the baking soda, cinnamon, ginger, cloves and salt. Whisk until well combined.
Add the all purpose flour to the wet ingredients. Mix until all lumps are gone - it will be very thick. Then pour in the hot water and stir; it will be much thinner.
Pour batter into a greased 9x9 square pan. Bake at 350°F for 35-40 minutes, or until the center springs back when lightly pressed.
Cool in the pan completely (about 2 hours), then dust with powdered sugar.
Serve with whipped cream and more powdered sugar to taste.
