BROCCOLI BACON SALAD

INGREDIENTS

2 medium heads broccoli, divided into florets (about 8 cups) ½ small red onion, diced 8 slices bacon, chopped ⅓ c sunflower seeds 3 tbsp hemp hearts CREAMY POPPY DRESSING 1 tbsp poppy seeds 2-3 tbsp swerve, more or less to taste 4 tbsp apple cider vinegar 1 tsp dry mustard 1 tsp kosher salt 3 tbsp full fat greek yogurt ½ c olive oil Makes 8 servings. Plan to chill at least 2 hours.

RECIPE NOTES

⭐️ Time is your BFF!! Marinate at least 2 hours to allow the dressing to break down the plant fibers in the broccoli. ⭐️ Crunch it your way! Swap out your favorite nuts and seeds as needed.

STEP 1

Combine all dressing ingredients in a bowl or 1-cup measuring cup; whisk vigorously until emulsified. Taste for seasoning and adjust as needed with salt, pepper, or sweetener.

Pour the dressing over the broccoli and red onion. Toss until evenly coated, then marinate at least 2 hours, & up to overnight.

STEP 3

Just before serving, crisp up the bacon pieces in a skillet over medium heat. Drain on paper towels.

Add the bacon, sunflower seeds, and hemp hearts. Toss until well combined, then serve. Enjoy!!
