CHERRY PIE BARS

with vanilla glaze

⭐️ 4 c fresh cherries ⭐️ 4 tbsp water ⭐️ ½ c sugar ⭐️ 2 tbsp cornstarch ⭐️ 2 tsp lemon juice ⭐️ ½ tsp almond extract ⭐️ ½ tsp vanilla extract

FILLING INGREDIENTS

⭐️ 1 c packed light brown sugar ⭐️ ¾ c salted butter, softened ⭐️ 1 tsp baking soda ⭐️ 1 c all-purpose flour ⭐️ 1 c rolled oats ⭐️ 1 c superfine almond flour ⭐️ ⅓ c sliced almonds

CRUST INGREDIENTS

⭐️ 1 c powdered sugar ⭐️ ½ tsp vanilla extract ⭐️ ½ tsp almond extract ⭐️ 3-4 tbsp heavy cream

GLAZE INGREDIENTS

Combine cherries, sugar, cornstarch and water. Simmer 7-8 minutes.

Once thick, stir in vanilla and almond extracts.

Cream brown sugar and butter at high speed until fluffy.

Add baking soda, flour, rolled oats, and almond flour. Mix until just combined.

Press 2/3 of the mixture into a lined 8x8 baking dish.

Spread filling over the crust.

Stir almonds into remaining crust mixture.

Sprinkle crust over the filling, then gently press.

Bake 30 minutes in a 350°F oven, or until golden brown.

Chill 2 hours. Whisk glaze ingredients until smooth. Slice into bars and top with glaze.
