Slice the tomatoes and fresh mozzarella; set aside.
Place chicken breasts on a sheet of parchment paper.
Use a rolling pin to pound to even thickness - this will tenderize the meat and ensure even grilling!
Repeat this process with all chicken breasts.
Mix seasoning - salt, pepper, italian seasoning, garlic powder, onion powder.
Brush chicken with olive oil, then sprinkle the seasoning blend evenly over both sides.
Grill chicken 5-6 minutes per side, or until internal temp reaches 155°F.
Cover and grill 2-3 minutes more, or until cheese melts and chicken is cooked through to 165°F.
Top each piece of chicken with fresh tomato slices and basil.
Drizzle with balsamic vinegar or balsamic glaze.
