SAUCE ¼ cup maple syrup ¼ cup coconut aminos or soy sauce 2 tsp rice vinegar 1 tbsp toasted sesame oil ¼ – ½ tsp red pepper flakes, optional 2 tsp cornstarch or arrowroot FILLING 1 tbsp olive oil 1 lb ground beef 2 cloves garlic, minced 2 tsp grated fresh ginger 1 medium red bell pepper, finely diced ½ c shredded carrots 4 whole green onions, sliced kosher salt, to taste ground pepper, to taste sesame seeds, to taste, for garnish Boston Bibb lettuce
⭐️ use ground chicken, pork, turkey, or even bison! ⭐️ add extra veggies - shredded cabbage or shredded zucchini are great options
Whisk all sauce ingredients until well combined, then set aside.
Saute the ground beef in the olive oil over medium high heat until no longer pink. Add the garlic and ginger and cook 1 minute more.
Add the bell pepper and carrots. Cook 3-5 minutes more, until cooked to your liking.
Pour in the stir fry sauce. Cook, stirring frequently, until the sauce thickens, 2-3 minutes.
Stir in the green onions, then remove from heat.
Portion into bibb lettuce leaves, then garnish with sesame seeds. Serve immediately. Enjoy!
