WHITE BEAN SOUP

bacon and kale

– 4 strips bacon, diced – 1 onion, diced – 2 carrots, halved and sliced – 2 stalks celery, sliced – 4 cloves garlic, minced – 2 cans white beans, with canning liquid – 4 c chicken broth – 1 bunch kale, coarsely chopped – 1 tbsp lemon juice – kosher salt

INGREDIENTS

Sautee bacon until browned and crisp.

Add onions, carrots, and celery; saute with bacon until soft. Then add garlic.

Add the canned beans with their  canning liquid and broth.

Simmer 10 minutes.

Add the kale and simmer 5 minutes.

Stir in lemon juice and salt to taste.
