ORZO SALAD

⭐️ 1.5 c orzo pasta ⭐️ 1 red pepper pepper ⭐️ 1 orange bell pepper ⭐️ ½ english cucumber ⭐️ ½ red onion ⭐️ 1.5 c corn ⭐️ ⅓ c fresh basil ⭐️ ⅓ c fresh parsley ⭐️ ¼ c pine nuts, toasted ⭐️ Kosher salt ⭐️ Ground pepper

SALAD INGREDIENTS

⭐️ ⅓ c extra virgin olive oil ⭐️ ¼ c lemon juice ⭐️ 2 tsp honey ⭐️ 1 tsp dijon mustard ⭐️ Pinch kosher salt

DRESSING INGREDIENTS

⭐️ MAKE IT VEGAN. Substitute 1 tsp sugar for the honey ⭐️ MAKE IT GF. DeLallo sells gluten free orzo pasta! ⭐️ MARINATE. The flavor improves with time. Marinate at least 2 hours, but we think it's best after 24 hours. ⭐️ PERFECT POTLUCK FARE! Because it's dairy free, this salad can stand up to the heat.

PRO TIPS

Prep! Finely diced vegetables, mince the herbs, toast the pine nuts, and cook orzo to al dente.

Combine all ingredients in a large mixing bowl.

Whisk dressing until emulsified, then pour over salad.

Toss ingredients until very well combined.

Chill at least 2 hours, and up to 24. Serve cold or room temperature.
