Combine chickpeas with lemon juice, olive oil, paprika and salt. Marinate 15 minutes to 1 hour.
Prep your veggies! Finely dice cucumber, red onion, bell pepper, and tomato.
Mince your herbs - fresh parsley and mint.
Add vegetables and herbs to the marinated chickpeas.
Toss until well combined. Taste for seasoning and adjust with salt and lemon juice to taste.
Serve immediately, or store in meal prep containers in the fridge.
