INSTANT POT RISOTTO
perfect every time
⭐️ 1 tbsp olive oil ⭐️ 1 large sweet onion, diced ⭐️ 2 cloves garlic, minced ⭐️ 1 c arborio rice ⭐️ ½ c dry white wine ⭐️ 2 c chicken broth ⭐️ 1 sprig fresh thyme ⭐️ 2 tbsp butter ⭐️ 2 oz finely grated parmesan cheese ⭐️ ground pepper, to taste ⭐️ kosher salt, to taste
ALL ABOUT ARBORIO ⭐️ short grain rice ⭐️ VERY starchy (this gives the sauce body!) ⭐️ available in most grocery stores ⭐️ no need to rinse first
Saute onion until soft. Add garlic and cook 1 minute. Add rice and saute 2 minutes more, until chalky white.
Deglaze with wine. Scrape the bottom clean and cook until wine absorbs. Add broth and fresh thyme.
Program to High Pressure for 5 minutes. Perform a quick release when the time goes off.
Add butter and 1/3 of the parmesan. Mix with a rubber spatula until smooth.
Add remaining cheese in 2 batches, stirring until smooth after each addition. Season with salt and pepper and serve.
TIPS for PERFECT RISOTTO ⭐️ you must use arborio rice; do not rinse ⭐️ make sure the wine fully absorbs and bottom of the pot is "clean" ⭐️ finely grate the parmesan for best texture
