PASTA SAUCE

fresh tomato

⭐️ 1 tbsp butter ⭐️ 1 tbsp olive oil ⭐️ 4 cloves garlic, minced ⭐️ 2 lb fresh tomatoes ⭐️ 2 tsp kosher salt ⭐️ 1/2 tsp ground pepper ⭐️ 1/2 c water, broth, or white wine ⭐️ 1 sprig fresh thyme ⭐️ 1 sprig fresh oregano

INGREDIENTS

⭐️ use the freshest, ripest tomatoes available. ⭐️ look for tomato "seconds" at the farmers market! they're imperfect looking, but cheap and tasty. ⭐️ tomatoes need a lot of salt to bring out their flavor.

PRO TIPS!

⭐️ For a Thinner Sauce:  add 1/4-1/2 cup water or broth after the tomatoes have cooked down. ⭐️ For a Chunkier Sauce:  add an additional tomato or add a diced red bell pepper. ⭐️ For a Smooth Sauce:  transfer to a stand blender; pulse or puree until desired consistency is reached.

TEXTURE

Dice tomatoes to 1". Sweep accumulated juices into the bowl while chopping.

Saute in butter until soft. Add garlic and cook until fragrant.

Add tomatoes, liquid, salt, and pepper. Top with fresh herbs.

Bring liquid to a simmer. Cook until tomatoes fall apart and sauce thickens.

Leave as is for a thick sauce. Puree for a smoother sauce.
