CREAMY PESTO CHICKEN
one skillet
⭐️ 4 boneless skinless chicken breasts ⭐️ ½ c all purpose flour ⭐️ 1 tsp kosher salt ⭐️ 1 tsp ground pepper ⭐️ 1 tsp dried basil ⭐️ ½ tsp garlic powder

⭐️ ½ c basil pesto ⭐️ ½ c heavy cream ⭐️ 3 tbsp olive oil, divided ⭐️ 1 pint cherry tomatoes ⭐️ ½ c chicken broth ⭐️ ¼ c fresh basil, julienned

Use your favorite pesto sauce, jarred or homemade. Basil pesto works best, but this recipe is pretty flexible!
Before you start!! Lightly pound chicken to an even thickness first.
This will (1) tenderize chicken and (2) ensure even cooking.
Combine pesto sauce and heavy cream.

Whisk until smooth. Set aside.

Whisk flour and seasonings. Dredge chicken through the flour mixture.

Sear chicken five minutes per side. Remove and set aside.

Saute tomatoes for 2 minutes.

Deglaze with broth, then add creamy pesto sauce. Return chicken and simmer until cooked through.

Garnish with fresh basil and serve immediately.
