CORN FRITTERS

with bacon & chives

⭐️ 4 strips bacon ⭐️ 1 c fine cornmeal ⭐️ 1 tbsp cornstarch ⭐️ 2 tsp baking powder ⭐️ 1 tsp kosher salt ⭐️ ½ tsp paprika ⭐️ ½ tsp garlic powder ⭐️ ½ tsp ground pepper ⭐️ 3 c corn kernels, fresh or frozen

 DRY INGREDIENTS

⭐️ ½ c milk ⭐️ 2 large eggs ⭐️ 2 tbsp minced chives ⭐️ 1 tbsp honey ⭐️ 2-4 tbsp olive oil (for pan frying)

 WET INGREDIENTS

Skip the all-purpose flour! These guy are made with cornmeal for a heartier texture with bonus corn flavor!

Whisk dry ingredients until well combined, then add the corn and cooked bacon.

Mix until the corn and bacon are evenly coated.

Whisk milk, eggs, honey, and chives until smooth.

Pour the wet ingredients into the corn mixture. Mix until evenly coated, then rest the batter for 5 minutes.

Pan fry 1/4 cup portions of batter until golden brown (about 3 minutes).

Flip and pan fry 2-3 minutes more, until puffed and cooked through.

Serve warm with sour cream and chives.
