- cauliflower rice (fresh) - lemon juice - extra virgin olive oil - fresh parsley - fresh mint - tomatoes - cucumber - salt
Divide cauliflower into florets and place half into a food processor.
Pulse until the florets are broken down into a rice-like texture.
Microwave the rice for 1 minute. Add lemon juice + salt; marinate 20 minutes.
Finely mince fresh parsley and mint - by hand or in a food processor.
Seed cucumber and tomato, then finely chop.
Add herbs, cucumber, tomato, and olive oil to marinated rice.
Toss until well combined, then taste for seasoning and adjust as needed.
